As many Aussies know, it can be hard to get a taste of home in the States. Few Americans have ever heard of pasties, let alone matchsticks and lamingtons. Australian Laurence Lindahl rectifies that at The Great Australian Bakery, where he welcomes homesick Aussie expats and Americans alike.
The bakers here treat guests to savory meat pies stuffed with steak and mushroom or chicken, cheese, and avocado. Similarly, they fill traditional sausage rolls with cheese and bacon and craft Australian pastries, including puff-pastry matchsticks packed with cream and jam and lamingtons, sponge cakes dipped in chocolate and sprinkled with coconut flecks.
