During lessons, students learn essential skills of horsemanship, from how to dress and mount a horse to how to gallop and parallel park.

On paths that wind along ancient roads and muddy creeks, Scott guides students and visitors on outings to the ranch's scenic corners. Whether on wooded or open land, Scott notes, there's "a good chance of seeing local wildlife." Afterward, Scott swaps his riding gear for a kitchen get-up and steps behind the grill to sear 6-ounce steaks. A hearty meal soon follows, incorporating Texas-style sides and freshly prepared pie.
