But the thing most likely to make guests actually exclaim "Sweet!" is the smoker itself, a mighty rotisserie where specially seasoned meats are cooked low and slow. Thanks to a formula that the crew has perfected over the last 10 years, ribs come out of that smoker moist and eager to leave the bone. Same goes for the smoked chicken, brisket, and pulled pork, which practically pulls itself. For those who need a little non-meat with their meat, the restaurant also serves up classic Southern sides such as collared greens and mac and cheese.
