Peeking through the floor-to-ceiling windows at the front of Ramen Jinya’s shop, passersby on Robson Street can see a variety of traditional Japanese dishes topping the modern-style tables. Celebrating their first anniversary on August 4, 2012, Ramen Jinya offers myriad tonkotsu ramen dishes—such as pork broth brimming with spinach, fried onion, bamboo and pork-belly char-siu—support toppings ranging from seaweed and broccoli to wontons and leeks. Chefs can also prepare each dish to go, allowing skateboarders to impress the judges by balancing bowls of curry on their heads.
