Penne, like a hammerhead shark, is rigid and boring until it’s submerged in water, at which point it quickly springs to life and develops a taste for swimmers. Celebrate this predatory noodle with today's Groupon to Arugula Bar e Ristorante, located in Boulder. Choose between the following options:

  • For $20, you get $40 worth of contemporary Italian cuisine Monday–Thursday.
  • For $15, you get $30 worth of contemporary Italian cuisine on Friday and Saturday.

Garnering accolades from 5280 magazine as one of the Best New Restaurants of 2009, Arugula Bar e Ristorante's chef Alec Schuler curates a menu of nutritious Italian entrees teeming with organic, sustainable meats and local, in-season produce. Cuisine architects kick off gustatory festivities with savory starters, such as the house-made Vin Santo pâté, a Tuscan-style chicken-liver dish doused in Vin Santo wine ($9). Tame veggie-tracking taste buds with the mushroom risotto, packed with grana padano cheese ($19), or quell aquatic appetites with the vigor of Captain Hook's poltergeist with the seared sea scallops in romesco sauce and a choice of a side ($22). The orecchiette bison bolognese ensnares prairie-dwellers in an innovative medley of bison meat and classic italian sauce ($17).

Breathe in the fresh breezes on Arugula's outdoor patio while sampling the eatery's extensive wine list, which includes the Principato pinot grigio, a light wine pressed from grapes grown near the Dolomite Alps that embodies hints of peach, apple, and the sweet echo of yodelers ($7/glass).

The food at Arugula emulates its namesake green—it’s light, healthy, and full of flavor. Executive chef and owner Alec Schuler, a New York native and son of European immigrants, assembles Arugula’s menu with culinary inspiration drawn from his nutrition-based training at Manhattan’s Natural Gourmet Cookery School as well as his many travels throughout the world. Schuler and his staff use natural meats, organic and seasonal produce from local vendors, and sustainably sourced fish and shellfish as the building blocks for their wholesome Italian dishes. Among them are housemade pastas and gnocchi, vegetarian and gluten-free entrees, and, of course, traditional seafood, pork, and beef.
