The instructor-led student chefs at Edgar's kitchen prepare rotating a la carte menus of culinary classics and new creations for adventurous appetites. Each enticing incarnation includes its own selection of soups and salads ($2.95–$4.95), such as a hearty corn chowder made with sweet peas, tender potatoes, and well-mannered bacon. Seasonal entrees ($6.95–$8.95) have appeared recently as the Cajun-inspired shrimp and chicken étouffée, pan-seared pork tenderloin, or parmesan-crusted, hollandaise-smothered trout, before disappearing to usher in the next week's toothsome selection. Guests can also satiate many-layered cravings with the sandwich selection ($5.95–$8.45), which regularly envelops present and past ingredient headliners, such as red peppers, goat cheese, and baby spinach, within a bready bear hug.
Every lunch plate at Edgar's is prepared by students plucked from the Restaurant Techniques class of Polly's Hospitality Institute, a career college operated by Goodwill. Each afternoon, the class splits in two, allowing half the students to brush up on their kitchen skills while the other half mans the restaurant's front of house––learning the fundamentals of seating, serving, and interpretive menu dance.
