Each meal at Espuma is plated so prettily that eating it seems an affront to art. Luckily, the restaurant's motto is, "It's okay ... you can lick the plate!" Doing so is the ultimate compliment to Executive Chef Jay Caputo, a James Beard award semi-finalist who honed his skills under two James Beard award-winners.
Caputo's expertise shines through after even a cursory glance at Espuma's Mediterranean menu. As the Washington Post's Eve Zibart said, "Caputo is that most seductive of chefs: one who values powerful flavors but keeps them in control rather than letting one rich and unruly indulgence run away with the dish." For instance, a savory plate of seared black bass and oyster mushrooms is lightly sweetened by carrot emulsion, and the juiciness of a sous vide three-day pork is cut by a spicy soy mustard. These entrees aren't permanent fixtures, however—Caputo changes the menu often, inventing new dishes as the seasons change and the ocean steadily replenishes its supply of salt.
The food's craftsmanship is matched by that of the cocktails, which have been honored five times in Delaware Today's Best of Delaware. Just like Espuma's motto, they're presented with a touch of humor: the blueberry lemonade is made with blueberry vodka, basil, homemade lemonade, and "elbow grease."
