While pursuing a degree in naturopathic medicine, Dr. Ivy Branin took her very first sip of an ancient beverage known as kombucha and promptly threw it in the trash. But instead of giving up on the beverage, she set out to brew the perfect batch herself, drawing on her background in biochemical engineering for the fermentation and carbonation process.
