How Do You Roll Chicago
Austin natives Yuen and Peter both grew up working in their parents' restaurant. But when it came time to pursue their own careers, they split off into different directions: Peter became the head sushi chef at a fine restaurant at the young age of 24, while Yuen worked a desk job, vowing he'd never return to a commercial kitchen. Soon, though, Yuen grew frustrated with his lunch hour options. So he picked up the phone, called Peter, and began an unexpected return to the restaurant world.
Together, Peter and Yuen established How Do You Roll?, a sushi-based series of restaurants that today occupy sites in five states. While fresh fish and rice form the foundation of their menu, items soar far beyond the realm of traditional sushi and sashimi for an inventive pan-Asian selection available only in their restaurants. Offerings include stuffed avocados, grilled chicken rolls, and even build-your-own sushi.
