Matsuyama Japanese Fusion
A playful spirit dances through the menu of Matsuyama Japanese Fusion, most obviously in elaborate maki with names such as Marilyn Munroll (stuffed voluptuously with deep-fried shrimp, crab, and scallops) and the Sushiman Burrito (tuna, salmon, avocado, and crab in a soy wrap). But the creativity at Matsuyama runs more than nori-deep. Small plates add Mexican, Vietnamese and Korean influences freely to the clean flavors of seasonal fresh fish, resulting in combinations including crab-stuffed jalapeño poppers and grilled salmon with mango salsa.
It's not a minimalistic approach, in other words. Chef Song Kim prefers to stock his pantry with a cornucopia of different herbs and other kicky ingredients. The resulting vibe is sophisticated but accessible—in fact, there's even a kids' menu filled with wholesome Japanese meats and veggies instead of Swedish Fish wrapped in rice.
