Centuries ago, the rough-and-tumble cowboys known as vaqueros roamed the Southwest. They traveled between present-day Texas and New Mexico and the markets of Mexico City. Along the way they trained horses, raised longhorn cattle, and ate huevos rancheros. To fuel the hungry work, settlers introduced the eggs of the chickens brought over from Spain to the ingredients and traditional preparation techniques favored by local cooks. The result was a hearty, no-frills dish—often served as a mid-morning meal around 11 a.m.—that kept ranch hands and cowboys alike ready to tackle their arduous tasks. The dish can be as simple as eggs fried to order, which are then set atop corn tortillas and smothered in a warm salsa. But, to make the dish maximally rib-sticking, the formula is often enhanced by sides of beans and rice and garnished with extras such as cheese, chorizo, and avocado.
