Pork Belly Grub Shack

Bacon and pork chops, both overworked foodstuffs, play second fiddle to the titular porcine cut at Pork Belly Grub Shack, which Gayot describes as "an unlikely partnership between a sushi master and a classically trained locavore." A collaboration between Billy Ngo (of Kru) and Aimel Formoli (of Formoli’s Bistro), the shack's clever fusion of global comfort foods has also drawn attention from the likes of Good Day Sacramento and the Sacramento Press. The menu nods to Vietnamese influences with a banh mi that layers sliced pork belly and pork paté on a french baguette and Asian street tacos stuffed with pork-belly croutons and spicy teriyaki sauce. Diners can detour to Europe with the French Pig sandwich’s melted brie and truffle oil, then return home to America with a catfish po’ boy and meat or mushroom burgers spread with garlic and lemon-pepper aiolis.

The shack’s informal decor, characterized by red and white checked tablecloths, pig figurines, and pig paintings by local artists Liz Miller and Matthew Byrd, lets diners relax instead of worrying about which fork to use when stabbing an unpleasant dinner companion.
