About SiP Bistro
As if being a wine bar, coffeehouse, and upscale eatery rolled into one smooth operation wasn't enough, SiP Bistro borrows one more influence for its look: its stone fireplace, high ceilings, and dark tones are reminiscent of a European bistro. Owners Justin and Sarah Hummel opened this Holly Springs staple in 2013, and they've since nurtured it into one of the area's most-popular hangouts. (They also happen to be sommeliers, which explains SiP's impressive wine list.) Their menu is extensive and packed with inventive creations; here are a few dishes to consider throughout the day:
In the morning: The fireman's breakfast steals the show with espresso-rubbed pork loin, two eggs over-easy, bacon, and hand-shredded hash browns—plus a warm, buttered baguette for good measure.
In the afternoon: Sarah threw together an impromptu sandwich for herself one day and it became a best-seller. The Sarah sandwich is stacked with Havarti dill cheese, roasted turkey, balsamic-drizzled mix greens, roasted red peppers, and house-made hummus on a toasted ciabatta roll.
In the evening: Charcuterie boards are the popular pick. They're loaded with meats—from duck salami to spicy capicola—and intriguing cheeses, as well as seasonal fruits, mixed nuts, and toasted artisan breads.
To drink: Try the spicy Mayan mocha, SiP's twist on Mexican hot chocolate. It blends Ghirardelli chocolate with red-hot cinnamon, and it's finished with cocoa, cinnamon, and cayenne pepper.
