Chefs use all manner of ingredients to create palate-surprising dishes, such as causa rellena, a stacked Peruvian creation with layers of potato, chicken, lime, and aji amarillo. Not all the dishes stay rooted in South America, though—the arroz chaufa, for instance, possesses an Asian-inspired crunch thanks to Chinese onions and soy sauce.
