The Border’s menu of traditional and eclectic Mexican cuisine enlists culinary influences from both sides of the Rio Grande. Emerging from the kitchen in a piping-hot skillet and hissing like a territorial teapot, the texas fajitas ($13.25) layer steak, chicken, and shrimp atop a sautéed bed of onions and bell peppers. The chefs toss freshly fried shrimp in a homemade buffalo sauce to create three buffalo-shrimp tacos ($7.99), and the tilapia loco ($10.50) crowns cuts of tilapia with a signature sauce. The chimichangas ($8.25) brim with a choice of chicken, beef, or beef tips, arriving at tables in soft or deep-fried flour tortillas.
