All About the Pig is a three-hour hands-on workshop where students learn to prepare delicious pork dishes from a Le Cordon Bleu–trained chef. Chefs in training are immediately greeted with jambalaya, whose piquant spices can warm the belly on a cold winter night. Then, the chef shows students how to prepare pork three ways, imparting easy at-home methods for stuffing your own sausage, curing bacon, and braising pork shoulder with a glaze of beurre manié. For a sweet finish, students practice their flambé techniques to prepare a traditional crepe suzette with winter citrus fruits. Register for the class here.
