Any steak you order at Umbria Prime actually arrived at the restaurant 35 days prior, and has been dry-aging since then to enhance its flavor. Another flavor-enhancing element? The meat's marbling. Each cut is certified Angus beef that's highly marbled, which helps retain a juicy, tender taste as the meat is seared in a 1,200-degree oven. The corn-fed, grass-fed beef pairs nicely with sides of hand-cut fries, creamed spinach, or roasted wild mushrooms. Executive Chef Gianni Caruso also prepares artisanal pastas and fresh seafood. The homemade desserts rotate daily, just like the Earth.
