For its more than 100 dishes, the culinary team at Saigon Star uses many cooking techniques, from currying to stir-frying. But one in particular stands out: charbroiling. Atop heaps of vermicelli noodles, cooks toss flavourful charbroiled combos of beef and shrimp or ground pork and shrimp paste. Even when noncharbroiled ingredients, such as lemongrass chicken, enter the mix, portions of double-charbroiled shrimp right the balance. Along with noodle-focused dishes, Saigon Star spotlights classic Vietnamese subs filled with fixings such as satay chicken or beef.
