Primitivo takes eating well back to basics—way back. The whole establishment is built around a roaring hearth that's fueled by white oak and coal. That hearth is responsible for the signature flame-kissed flavor of every item on the seasonal menu. That's right—the hearth isn't just for show; the food is cooked there as well.
It's the brainchild of a team of local chefs, led by LaBoca mastermind Adolfo Garcia. Rather than hewing to any one cuisine or style, the entrees on the menu abide by one rule—at least one element of every item must have been cooked over that central fire. The idea was inspired by how these professional colleagues actually cook at their weekend get-togethers.
