Almost completely obscured beneath a high-rise network of offices in Midtown, Sakagura is a veritable sanctuary for sake worshippers. There are more than 200 types of sake on the menu, so many that the restaurant has devised a color-coded legend just to help customers navigate the list. Match up the color-coded dot next to each dish––such as thinly sliced fluke carpaccio or miso-stewed shredded beef back ribs––to a sake sporting a dot of the same color, and an ideal pairing is born. Things can still get tricky, however, considering the plates here are meant to be shared, tapas-style, yielding not one but many sake pairings. Luckily, staff are more than happy to help by making recommendations, choosing the style of glass that will best enhance the sake's flavor, and devising clever raps to help customers remember their orders for next time.
