Despite taking its name from the Papago Park landmark, Hole in the Rock Restaurant and Lounge takes its main source of inspiration from a time period a little closer to our own: the 1960s. The restaurant hits all the notes of a mid-century modern restaurant, right down to the wood paneling and stone walls. The menu is similarly comforting. Working with meats he smokes himself in house, Chef Jeremy Wilson puts together dishes such as the sugar smoked salmon and cold-smoked steak finished with a piquant honey habanero sauce. And to rise to the standards set by the lounge's ambiance, the bar mixes up classic craft cocktails, including a Manhattan blended with Jameson, and the Savory Samba Samba made with Samba Mescal.
