Master-mixologist Micah Dew takes puts a twist on classic cocktails, explaining step-by-step how to infuse spirits with the flavours of seasonal fruits and vegetables. Students will learn to manifest a “Beeting Heart” among other unique drinks, with some wafting hints of cucumber or blood orange. Dew also covers herb and fruit reductions and candied holiday cocktails. The Bar Chef program takes place on Monday nights from 7 p.m. to 10 p.m.

This relaxed class aims to help wine connoisseurs both new and experienced gain a greater appreciation of British Columbia’s wines. Topics covered include identifying imperfect wines, creating a wine list, opening bottles, basic tasting skills, and proper cellaring techniques. The wine-tasting program is held on Friday nights from 7 p.m. to 10 p.m.

Between also working a bartending job five nights a week at The Roxy Vancouver, Micah lends industry-veterans Luch and Alicia a hand in leading a lineup of diverse classes and workshops. The sessions range from wine-tasting seminars to Serving It Right certification, a legal necessity in British Columbia. All of these classes take place behind real bars at Metropolitan Bartending School's facilities, equipped with the most commonly used liquor bottles, a POS training-mode system for running tabs, and an animatronic priest, rabbi, and minister.
