Billy Beach Sushi
After opening a number of Japanese restaurants, chef Billy Beach came to Ballard, where he sliced, rolled, and decorated flavorful bites of sushi inside his namesake eatery, Billy Beach Sushi. No ingredient is off-limits in the selection of signature rolls, offering up tastes of seared new york steak, pickled daikon radishes, edamame hummus, and apple slices. Some rolls are also drizzled with a honey-chipotle sauce, and others are encased in a crispy tempura shell. Chefs build rolls in the dining room at the sushi bar, and guests seated there can watch them work while they sip sake or a signature cocktail, such as the Blood & Basil’s mix of basil-infused Reyka vodka, Solerno blood orange liquor, lime juice, and fresh basil leaves. Plenty of table space holds larger groups inside a dining room surrounded by walls of mosaic textured squares and rectangles reminiscent of a Tetris board.
