When Chef Michael Barnes crafts a piece of chocolate, he considers every aspect of the tasting experience, from the size of the bite to the blend of bitter, salty, and sweet. Once he finds the right balance of portion, texture, and flavor, he pours his delicacies by hand and shares them with every visitor to his elegantly appointed Danville tasting room. "Fine chocolate tasting is very similar to wine-tasting," says Chef Barnes's website, "in that you use different steps and senses to evaluate the quality and taste of the product." Perhaps that's why his chocolate-tasting events—typically one to two hours in length—often feature wine samples to pair with each chocolate course.
