ShiAwase Sushi Chicago
By partnering up with Ohm Onthuam—the restaurateur behind Amarit and Ukai Sushi—Wany Phuang was finally able to open her own spot, one where the sushi is as expressive as the decor is understated. The sakura roll, for example, replicates its cherry-blossom namesake with a colorful, rice-free arrangement of salmon, tuna, yellowtail, mango, and spring mix shaped as a bloom. The fish is delivered multiple times weekly to this BYOB spot, where pine walls and imported Asian dinnerware complement a custom-built sushi bar.
Robatas are a specialty here, as well. These skewers are threaded with Japanese barbecue, everything from shishito peppers to bacon-wrapped cherry tomatoes.
