Sur 16 Restaurant
History inspires the chefs at Sur 16 Restaurant. As Executive Chef Javier Dalzell told Capitol Hill Seattle, the recipes showcase "a clash of the culinary techniques from when Spain conquered Mexico.” But Pacific Northwestern sensibilities also shape the menu. These influences are apparent in dishes such as Valencia–style paella with saffron-infused pork and the vegetarian ceviche with lime-marinated mushrooms.
Boldness isn't limited to the menu's flavors, however. The dining room features a crimson accent wall adorned with Dia de los Muertos–style skull art. Even the bartenders challenge expectations—not by defying gravity or breathing through gills, but by putting a unique twist on classic cocktails, such as the bourbon-infused mojito and mezcalini.
