After a one-hour lecture, an organic vegetable lasagna tasting, and viewing of an educational video, Culinary Institute of America graduate Andrew Bennardo leads students through a hands-on juicing lesson. Examples of juicing results can be seen at Andrew Bennardo's other venture, Juiceateria, and samples of fruit and vegetable juices and smoothies are provided.
Classes also aim to teach students how to adopt a whole-food, plant-based diet. Recommended foods are free of preservatives, artificial flavorings, and added sugars. The raw diet can be tailored to be gluten, soy, dairy, and/or MSG free. Classes take place on Sundays at 10 a.m. and 3 p.m.

Chef Andrew Bennardo—affectionately known as chef Baba around the kitchen—supervises his house-made mozzarella as it completes its majestic metamorphosis from curd to brick, eventually melting the fully formed cheese atop pastas, pizzas, and other Italian dishes. He and his staff also nestle cured meats, gourmet cheeses, and crisp vegetables into an array of hero sandwiches named for Italian luminaries, such as Verdi, da Vinci, and Galileo. In addition to a robust Italian menu, chef Andrew has recently become well-versed in the ways of organic, whole-food, plant-based diets. This inspired him to return to school to become certified in raw and vegan cuisine, as well as help open a juicing cafe, Juiceateria.
