Cesar Hervert no longer works as a teacher, as he did in Veracruz, Mexico. But he still finds opportunities to educate—his restaurant, Tmaz Taqueria, functions as a thorough primer on his home country's cuisine. His menu features more than 20 different tacos, filled with everything from chorizo and potatoes to grilled mushrooms and onions, but he eventually hopes to offer 32 choices: one for each of Mexico's states. In the restaurant and on its Facebook page, he also introduces customers to less-common Mexican specialties such as menudo, antojitos (street-food-style snacks), and the Kings' Day cake known as rosca de reyes.
The latter is just one of many sweet treats turned out of the bakery's ovens, all made from scratch and from fresh ingredients. That freezer-free ideal also extends into the savory menu. Tmaz's chefs use organic ingredients whenever possible to make dishes such as tortas on fresh telera bread, chipotle-marinated chicken, and fried pork with tomatillo salsa.
