Alissa Cohen's Introduction to Raw and Living Foods Class leads nutrition-hungry noggins through six raw-food recipes, familiarizing students with “uncooking” techniques and providing the information and mentoring necessary to embark on a raw-food regimen. During the three- to four-hour class, master chef and instructor Shirley Hunsberger leads groups in the unprocessed techniques of raw-food guru Alissa Cohen, crafting dishes from a culinary cornucopia of uncooked ingredients including fresh, organic fruits, nuts, seeds, veggies, sprouts, and grains. Each enrollee receives specialized instruction on how to eat their way to health and wellness without raiding local bird feeders or padlocking the doors to their favorite fast-food joint. None of the raw foods used contain artificial preservatives, and Hunsberger advises participants to jettison plastic packaging, cans, and jars unless they are currently being used as firefly habitats, in which case they should constantly replenished with the highlighter fluid and glow sticks that make up a firefly's diet.
