In 2004, Chicago culinary icon and Michelin-starred chef Paul Virant opened Vie Restaurant in Western Springs. Since opening, the restaurant has been lauded by the press, including earning a three-star review by Chicago Tribune dining critic Phil Vettel. It's even nabbed a spot on Gayot's list of Top 40 Restaurants in the U.S. every year since 2008.
Its success should come as no surprise to anyone who has heard of Virant. After working with several well-regarded chefs in New York, Virant moved to Chicago, where he made a name for himself working at some of the country's top restaurants, including Charlie Trotter's, Everest, Ambria, and Blackbird. He's also been nominated for a James Beard Award, appeared on the Today show, and competed on Iron Chef America.
At Vie, Virant and his team showcase their skills while whipping up contemporary American cuisine using local ingredients. The seasonal menu changes frequently, but it has included pickled braised beef cheeks, slow-roasted goat leg and goat thuringer sausage alongside roasted grapes and milkweed pods, and wood-grilled CDK Ranch beef strip loin with smoked almond butter.
