Cutters Crabhouse's simple floor plan proves that sometimes it's best to stick to what Mother Nature gives you. In this case, that's a spectacular view. Every seat in the house has sight-lines toward floor-to-ceiling windows that open out onto Elliott Bay, Mt. Rainier, the Olympic Mountains, and the Port of Seattle. But the restaurant's designers aren't the only ones who appreciate the wonders of the Pacific Northwest. The chefs do, too. For proof, just look to their takes on seafood and contemporary northwest cuisine, from pacific sashimi grade ahi poke and northwest seafood jambalaya to seafood mac & cheese and dungeness, snow and king crab legs. They also prepare exquisite sushi and maki rolls. To go with these seafood specialties, bartenders mix signature cocktails using seasonal juices.
