And while there is some modern technology in the process, the master distiller here—a retried Army EOD tech—prefers to mix his elixir by hand in small batches. Paul and his wife became inspired to start their own distillery, so he enrolled in distiller courses in Kentucky. Paul spent several years learning the craft and assembling equipment. Finally, in spring of 2016, he opened the doors to Mad Rabbit Distillery in an area known for its booze—established places such as Wonderland and Westminster Brewing Co. aren't far away. At Mad Rabbit, Paul and his team churn out premium craft spirits, and they plan on trying their hand at almost everything (except tequila). Visitors can try those creations in the tasting room, or they can even take a peak behind the scenes of this budding operation during tours.
