John Gizzi and Diann Greco, the American Wine Society–certified wine judges at Make Wine With Us, teach wine aficionados to create their own wines using grapes harvested in Californian and Chilean vineyards. At the start of the nine-month process (California grapes in the fall, Chile grapes in the spring), winemakers-to-be assemble with fellow enthusiasts to learn the intricacies of the trade. Patrons learn to crush and destem grapes in a machine called a crusher-destemmer, named after the device's favorite Germanic metal band. Following the crushing process, a hydraulic press forces juice into barrels, where it shall remain until the conclusion of its sweet, sweet metamorphosis.
At the end of the nine-month period, newly minted winemakers lean on family and friends to fill, cork, and custom-label the finished product. Budding vintners then tote home their vintages to share with family, friends, and robot butlers with built-in carafes.
At Ridgewood Culinary Studio, small class sizes and a playful, hands-on approach to cooking empower students of all ages to confidently make meals from scratch. In addition to teaching youngsters basic skills such as kitchen safety and how to get out of dishwashing duty, instructors inspire adult gourmands with classes on grilling, barbecuing, and other types of cuisine. Regardless of the class or age group, instructors emphasize mindful eating habits and nutritious recipes. The commercial kitchen also plays host to summer camps, birthday parties, and business-building events.
Draped in fondant flowers and bright swirls of buttercream, Buddy Valastro's cakes would catch anyone's eye—but that's especially true for fans of reality TV. The master baker and his visually stunning creations both star on TLC's Cake Boss, which has filmed at the Valastro family's Hoboken confectionery, Carlo's Bakery, since 2009.
Buddy's cakes have also won national notice beyond the show, including features in publications such as The Knot and Brides. And beyond designing delectable cakes for special occasions, Buddy shares his secrets through hands-on cake decorating classes, which are taught by his dedicated team of bakers at locations throughout Morristown, Red Bank, and Ridgewood New Jersey bakeries as well as the Jersey City and Lackawanna Cake Factory.
A cake decorating specialist for Carlo's Bakery, Gabby Parisi, talked to us about what it's like to attend the bakery's fondant cake decorating classes (buttercream cake decorating classes are also available).
Are the fondant classes beginner-friendly?
“People find fondant intimidating because the tools and know-how aren’t readily available, but when you come to the class, you realize it’s even easier than working with buttercream."
What types of decorations can students put on their cakes?
"We use water and a paintbrush to apply flowers, fall leaves, bows, and other shapes. It’s super easy once you know all the tricks—you can do almost anything [with fondant], it's really kind of magical. Buddy likes to describe it as the Houdini of cake decorating.”
Are classes available at all Carlo’s Bakery locations?
"Classes are available at our Morristown, Red Bank, and Ridgewood New Jersey bakeries as well as at our Jersey City/Lackawanna Cake Factory.
What’s the craziest cake ever made in Carlo's Bakery?
"I’m sure a lot of people will be familiar with the cakes from the TV show, Cake Boss. Buddy always says the craziest cake we’ve ever made was the Transformer, or the life-size Nascar cake."

Like most parents, Cyndi R. doesn't like to take chances with her child's wellbeing. By the time her son was 13 months old, Cyndi had interviewed roughly 20 childcare providers—but she noticed something different when she walked into the local KinderCare. The staff here greeted every child by name and, as she peeked into each of the classrooms, Cyndi noticed engaged instructors leading one-on-one lessons. The center's Assistant Director even took the time to answer all of her questions, both before and after she decided to enroll her son.
The thing is, this isn't a unique experience. KinderCare now has more than 1,700 centers, and parents across the country share similar thoughts on their local educators. To hear them tell it, it's the commitment of those teachers that makes all the difference. Twice a year, KinderCare hosts the largest early childhood teacher-training program in the country, and every center pursues national accreditation. All of this translates into the development of social, emotional, physical, and intellectual skills in infants and children up to 12 years old.
That may seem like a lot of skills to entrust a daycare with, but KinderCare is more than just a daycare—in fact, it's better to think of it as a learning center. During daycare, kindergarten, and before- and after-school programs, KinderCare's educators lead activities that focus on six different areas, including math and science, language and literacy, and the art of opening a tricky juice box.
