Four Things to Know about Night Shift Brewing
Formed in 2012 by a trio of pals that frequently tinkered with homebrew recipes into the wee hours of the morning, Night Shift Brewing aims to create a memorable selection of complex and diverse craft brews. Read on to discover more about these hobbyists-turned-pros and their Everett brewery:
The brewery has grown exponentially since it started. The team began homebrewing in a Somerville kitchen before moving to a 3,000-square-foot spot on Charleton Street. However, Night Shift quickly outgrew the space and moved to its current 30,000-square-foot location on Santilli Highway in 2014.
Night Shift has a beer for just about everyone. Hopheads can opt for The 87, an American-style double IPA, or Morph, the brewery’s rotating series of IPAs. The year-round selection includes several Belgian-style beers, plus a rye ale brewed with agave nectar and habanero peppers. Seasonally, there are a wealth of sours to choose from.
The brewery has its own barrel society. Each year, the brewers offer their loyal customers their most unique offerings in the form a membership to this society. Previous brews include Elixir, a wheat-wine-style ale brewed with honey and aged in brandy barrels, and Quasar, a wild ale barrel aged with passionfruit.
Night Shift’s calendar lets you know when its beers are freshest. In addition to the canning dates for popular beers, the schedule includes open-mic and trivia nights, and informs visitors when food trucks will stop by.
In Focus: Aeronaut Brewing Company
Year established: 2014
Who founded it: three MIT students, each of whom has a Ph.D
Where it’s located: the Ames Safety Envelope factory in Union Square
How they transformed the space: by tearing up the floors in the huge loading bay and installing brew tanks salvaged from around the country
Popular beer: Saison of the Western Ghats, a French-style ale that’s light and spicy
What else goes on here: live music and farmers markets
Fun fact: the brewery only occupies one-third of the 12,000-square-foot space; the rest of Aeronaut consists of food-minded start-ups, and it’s all part of Aeronaut’s effort to build a huge community of sustainable businesses.
