Chef Carlos Torres flavors his fare with virgin olive oils, aged balsamic vinegar, and fresh herbs. During breakfast and lunch, servers deliver oven-fresh croissants, Florida salads, and spicy tomato-flatbread sandwiches to diners in the restaurant or to vacationers relaxing poolside wearing complimentary pairs of deep-fried floaties.
