Since water is the main ingredient in coffee, the baristas at Caffe Moderne inspect it just as carefully as their arabica beans. According to city measurements, Wichita’s tap water exceeds the average hardness level by 600%–700%, making it unsuitable for brewing coffee. To counteract this, Caffe Moderne filters its water through reverse-osmosis taps that normalize mineral content.
