During three-hour sushi-making lessons, Madame Saito teaches up to 35 students how to create two regular sushi rolls, two reverse rolls, two hand rolls, a shrimp-tempura roll, a soft-shell-crab-tempura roll, and 20 pieces of nigiri and sashimi. Classes meet on select Wednesday evenings and Sunday afternoons at The HeadHouse; see the class page for specific dates and times.
Philadelphia calls Madame Saito the Queen of Sushi, and it's easy to see why. Armed with formal culinary training from Le Cordon Bleu and the Ritz Escoffier in Paris and experience from apprenticeships under premier Tokyo sushi chefs, she has committed the last 26 years to spreading her love for Japanese culture and contemporary fusion cuisine. Although she leaves time in her schedule to manage Tokio Sushi Bar—her sushi restaurant with French culinary influences—, The HeadHouse Cafe, and to conduct an annual sushi-making competition, Madame Saito counts education as one of her highest priorities. She regularly commits her quadrilingual tongue to demystifying the art of sushi during classes for aspiring chefs and casual students alike, teaching them how to hand roll maki and slice fish into perfectly uniform dodecahedrons.

“Having the students in a circle/square and Madame Saito in the middle would have been better. Groupon deal should indicate that you need to bring your own sushi knife. Offer should not be treated as 'expired' if customer has made several attempts to schedule class within the coupon time limit but did not hear back from provider within that time limit. It was a lot of fun and Madam Saito was very gracious and an excellent teacher. I will do the follow up classes.”
“Bring a container. There will be lots of delicious leftovers! Bring a knife.... A sharp knife will make things easier. ”
“It was a great class and a lot of fun! Thanks!”
