Fired by charcoal and heated to 900 degrees on the sides, the tandoor locks in meat's natural juices and the flavors of herbs, spices, and rambunctious genies. Ingredients such as turmeric, cardamom, and ginger balance out each bite against the zestier flavors, as do four types of chutney.
