From their list of 300 vodkas, which hail from regions as varied as France, Vietnam, and Armenia, the bartenders at Czar Ice Bar can assemble 330,791,175 custom flights. But they don't just serve vodka straight—they also infuse it with seasonal flavors such as spicy pepper or lemon thyme or embed chilled shots of it inside ice blocks for geologists of the future to discover. Libations stay equally cool on Czar's 27-foot-long ice bar top, a frosty surface that glows among crystal chandeliers and towering display cases containing the bar's many glistening bottles.
Though European flavors dominate the drink menu, Czar's kitchen takes its culinary cues from Japan. Along with traditional sushi and sashimi, the menu is filled with meticulously assembled specialties by acclaimed sushi chef Saito Saito. The Super Crunch maki balances tempura, smoked salmon, and sesame-garlic sauce, and the Four Seasons combines a mix of fish with jalapeño, onion, and four caviars to match its four house sauces. The mango roll, which combines shrimp tempura, mango, and a sweet and sour sauce, was recently named a "must-try taste" by Jezebel magazine.
