When you combine the words "cheese" and "tortilla" you get Las Quesadillas ATX. The fast-serve eatery only serves two things: quesadillas and sopes, which are the open-faced version of sorts. Whichever you order, the building blocks are the same—a tortilla base that is piled high with your choice of meats, veggies, and cheese. The quesadilla is then folded over and grilled like a panini, while the sopes is left open. In Mexico, sopes sold from a street cart are traditionally folded and eaten like a slice of pizza.
