Their chef's inspiration for El Borrego started many years ago with local Sunday traditions in Mexico, where families gather together to eat barbacoas, generally made from Borrego. That is why the restaurant's menu has been created for the whole family to enjoy. Chef Ruben Mota, loving father, husband and good friend, who was a very passionate leader originally created El Borrego, In his loving memory, the local Chef, who worked by his side for many years, has been updating his recipes to create more bold and contemporary dishes, always taking into account the origin and culture of the authentic Mexican cuisine.
