In its own words, the chefs of Ray Ray's "balances tradition with adventure," developing fusion recipes as comforting as they are geographically wide-ranging. Chefs count Brazil, Cuba, the Caribbean, and Asia among their culinary influences, and they strive to make every meal a healthy one. The resulting sandwiches, salads, tacos, and bean bowls represent a wide-ranging array of tastes, and even a single dish can surprise palates on a slew of levels. For example, the Seoul Food taco pairs Korean barbecue steak with a side of Yuca fries, while the Nooga bowl unites smashed yucca, braised greens, and citrus pork with a side of Jamaican jonnie cake. While munching a meal, a guest might detox with raw, organic juice blend, or joyfully re-tox with a specialty cocktail.
