####New Tokyo Though its name suggests a futuristic take on the cuisine of Japan’s capital, New Tokyo doesn’t stray far from that city’s culinary heritage. Dishes such as the steamed vegetable dumplings and tempura noodle soup are among the menu’s traditional staples. The chefs’ inspired sushi rolls, however, ultimately earn New Tokyo its name. Guests can watch at the sushi bar as they wrap together soft-shell crab and fish eggs in the Big Spider roll or blend avocado, cucumber, and spinach in the Popeye roll, which comes with a complimentary sailor’s tattoo in squid ink.
