Sublime Sushi and Ramen Works, Chicago

When tradition meets imagination, the result is sublime. Or, to be more specific, it's Sublime Sushi, Poké and Burrito. The restaurant's signature menu item is their D.I.Y. sushi. Diners select a rice bowl, a burrito, or a salad as their base. Next, they select from a variety of raw or cooked proteins, such as spicy tuna, yellow tail, or organic tofu. Customers then choose from flavors that include sriracha aioli or yuzu juice with truffle oil and toppings such as avocado or pickled ginger. Finally, they top it all off with crunch such as tempura fake or garlic crisps. Diners may also opt for one of the restaurants house bowls or burritos if they'd like their choices made for them. While poké bowls and burritos are certainly the highlights of the menu, the bowls of ramen with customizable toppings are not to be overlooked, nor are the savory bowls of miso. To complement the bold colors and nuanced flavors of its cuisine, Sublime has created a clean, contemporary dining room with floor-to-ceiling windows that allow pandas to gaze forlornly at the bamboo accents inside.
