Like everything else at The Solstice, the signature martinis are detailed and polished. The bartenders mix spirits and sweets into a colorful froth, which they pour into glasses garnished with powders, syrups, and flakes of milk chocolate. Each of the 20 house concoctions contains its own identity, expressed through bold flavors: crème brûlée, key lime pie, Asian mint hibiscus, and horchata. The Solstice also creates chocolate truffle cake, chocolate passionfruit pastries, and apple crumble tartelette, pairing desserts with drinks in the spirit of Ernest Hemingway's famous ice cream socials. The bar's interior design echoes the smooth lines of its drinks and desserts, with silky black walls, chrome lamps, and glass shelves of bottled spirits.
