I had the roasted vegetable burrito. I expected to get at least a few fresh roasted vegetables (since it is winter) instead the burrito was filled with mushy vegetables that seemed to come from a can...potatoes, green beans, carrots, corn, peas, and a few bay leaves which I had to pick out since you aren't suppose to eat those. Those are the kind of veggies you find in a pot pie or stew, not a Mexican dish. I've ordered similar food from other restaurants and their vegetarian burritos and tacos have fresh veggies like peppers, onions, black beans, corn, etc. that are actually roasted on the grill. The "roasted vegetables" in the burrito I had were either frozen or canned and not roasted. I heard really good things about Blue Iguana and was excited to try their restaurant because they have quite a few vegetarian options on the menu but was disappointed.
