Duck-confit quesadillas, with serrano peppers, tomatillo salsa, and cumin-infused crème fraîche, for example, turn a bar-food staple on its head. The chefs also drizzle sour-cherry compote over pork chops and leave crackling pork shank covered in spicy barbecue sauce like the models in the first scene of a commercial for laundry detergent. That same inventive spirit shines on the cocktail menu. The limoncello collins, a reimagining of the tom collins, calls in the tart liqueur to complement biting sprigs of mint and a mist of carbonation.
