Sylvette has always known her way around a kitchen. Now, however, she knows her way around several. As the chef behind The Hummus Factory, she places a premium on fresh ingredients, a fact that earned her original El Segundo restaurant a loyal following and soon inspired the family to branch out to a growing number of locations. Now, no matter which Hummus Factory you dine in, you'll find fattoush, lentil soup, and kebabs made according to Sylvette's original recipes. And, of course, you'll find plenty of hummus—five types to be exact, ranging from original (tahini, garlic, and lemon juice) to Latin-style (peperoncini, jalapeno, tomato, and cilantro).
