About Jay's Bistro
Downtown Fort Collins is typically a blur of activity. In that whirlwind of concerts, festivals, and special events, however, at least one thing has remained constant: Jay's Bistro. For decades, it has dished out gourmet seasonal cuisine—first helmed by original owners, Jay and Jacki Witlen, and today under the steady direction of Norm and Wednesday Vogel. At least four nights per week, live music from the piano lounge supplements the bistro's inviting atmosphere. As it does, visitors browse the extensive wine list and feast on chef Rhys Edmunds' creations, such as:
- Mandarin chop chop salad (Lunch): Light but filling, this salad features grilled chicken, mixed greens, peanuts, and mandarin wedges all linked by a sesame ginger dressing.
- Pan-roasted Colorado striped bass (Dinner): The name says it all, and it's served with a clam-chowder sauce and crispy potatoes.
- Lobster pot pie (Lunch, Mon-Fri): A hearty treat packed with Maine lobster, carrots, peas, onions, celery, and lobster cream
- Wild boar tacos (Tapas): These reside on the bistro's capacious tapas menu, served with lingonberry preserves and a cranberry slaw.

Probably the worst experience I ever had at Jays. Only one waitress working the bar area and the outside patio other than a couple of younger waiters filling water glasses and picking up dirty dishes. Service was very slow but not the waitresses fault she was moving as fast as she could. The appetizers were good but I ordered the steak cooked medium but it was pretty much well done. I didn’t complain because for starters I wasn’t sure how soon I would even get anyone’s attention. Our drinks ran out before we were asked if we wanted more and then we had to wIt to get those.
The next problem was my fault because I should have read the fine print on the Groupon certificate but it was only good Monday through Thursday; which was not the case in the last several time we bought these for Jays so I just assumed there wasn’t a limitation. We went on Friday like we have in the past. The manager was nice enough to let us use the value I paid for it but not the $100 it was valued. Plus it expired the next day so there was no time to use it again. The length of time this certificate was good for was also a shorter amount of time.
I would like to see the $50 option come back again; the $100 is too much for Two people. We ate way too much trying to meet the $100 and then ended up paying more than we thought because it couldn’t be honored.
We left Jays feeling very disappointed and thinking it will probably be a long time before we go back and buy another Groupon. For sure I will read the fine print more closely which a customer shouldn’t have to do.

Nice atmosphere, creative and well-prepared food. Want to see what the new owners do next.
