Like many breweries, Iowa City Brewlab was born from a homebrewing hobby. But the founders, father and son Drew and Nathan Letcher, are just as interested in the science behind beer as the beverage itself. That's because two boast software engineering and biochemistry backgrounds, respectively. Their love for the science of suds shows with merely a glance inside the brewery's science-themed interior. Here, guests can sidle up to the black slate bar or have a seat at one of the taproom's lab tables to sip kombucha or one of the many obscure beer styles.
